Creamy Sweetcorn Soup

A delicious and warming soup for the Autumn and Winter months.

Ingredients

  • Vegetable Oil
  • Red Bell Pepper
  • Brown Onion
  • Medium Potato
  • Chilli Powder
  • 400g Tinned Sweetcorn
  • Vegetable Stock Cube
  • Lime
  • Feta / Salad Cheese
  • Garlic Paste

Method



2) De-seed and dice a red bell pepper.



3)  Peel and then dice a medium sized potato into small cubes.




4) Juice a lime

 

 

1) Peel and cut an onion into small pieces.



5) Weigh our approximately 350g of drained sweetcorn




6) Dissolve a vegetable stock cube in 1/2 Litre of boiled water.




7) Measure out 50g of Feta / Salad Cheese.



11)  Then add your 350g of sweetcorn and then your 1/2 Litre of Stock and lime juice.



15) Put everything in a blender and blitz until smooth



16) Now its time to serve - add a little feta /salad cheese and sweetcorn pieces onto the top.


8) Heat a large saucepan with oil over a medium heat and add your diced bell pepper and onion.


9)Add 2tsp of garlic paste and fry together for 5 minutes until soft.


10) Next add your diced potatoes and tsp of chilli powder. (more if you would like it spicier)


12) Bring to the boil and then reduce to a medium heat and cover with a lid.


13) Leave to simmer for 20mins




14) Add in the feta / salad cheese and stir in.

Serve with freshly baked bread with plenty of butter!
