Pineapple Upside Down Cake

Ingredients 

  • 4tsps of Strawberry Jam

  • 1 can of Pineapple Rings

  • 100g Caster Sugar

  • 100g Margarine

  • 100g Plain Flour

  • 2 Eggs

  • Vanilla Essence

  • Baking Powder

  • Glace Cherries

Method

1) Grease a 20cm sponge tin.

2) Spread a layer of Jam over the base of the tin.

3) Top the Jam with 4 Pineapple Rings

4) Place as many Glace Cherries as you would like for the top.

5) Measure out 100g of Caster Sugar

6) Measure out 100g of Plain Flour

​

7) Measure out 100g of Margarine

8) Add all the weighed out ingredients to a mixing bowl.

​

9) Add 2 eggs to the bowl

​

10) Add 1 tsp of Baking Powder

11) Add 1tsp of Vanilla Essence

​

12) Mix it all together with an electric whisk until smooth

13) Spread the mixture over the jam and pineapple slices in the baking tin, being careful not to move them too much.

​

14) Once completely covered, place the tin in a preheated oven 160 / Gas Mark 3 and bake for 25-30 mins until firm to touch.

15) Once the cake has cooled slightly, carefully use a plate to flip it.

​

16) Time to reveal your cake.

Serving Suggestion

Serve the Pineapple upside down cake with some natural yoghurt or custard.
