Pineapple Upside Down Cake

Serves : 8

Pre heat Oven to : 160 ⁰C / Gas Mark 3

Ingredients

  • 4 tsp Apricot Jam
  • Can of Pineapple Rings
  • 100g Castor Sugar
  • 100g Magarine
  • 100g Plain Flour
  • 2 Eggs
  • 1 tsp Vanilla Essence
  • 1 tsp Baking Powder

Method



1. Grease a 20cm sponge tin and line base with greaseproof paper.


2. Spread base with jam and top with pineapple pieces

3. Mix all ingredients with an electric whisk until smooth

4. Spread mixture over jam and pineapple pieces in tin

5. Bake for 25 - 30 Mins until firm to touch

6. Let the cake cool slightly and then turn out onto a plate and remove greaseproof paper.

To Serve

Serve hot or cold with ice cream or fromage frais
